Favorite Fall Vegetarian Recipe
I just created this delicious vegetarian meal full of fall flavors and aromas… enjoy!
This makes 3-4 servings and I encourage you to add more or less ingredients and spices where you feel necessary and of course to accomodate more guests:)
*Also, this recipe can also be made vegan by eliminating ghee and using your own vegan substitute.
Add brown rice (approx 3/4 cup) to pot and bring to a boil, then reduce heat. After 5-10 minutes add chickpeas (1/2 cup), chopped carrots (1/4 cup) and season with cinnamon and tumeric (you can also add any other spices here – ginger would work nicely). Simmer the ingredients until rice is fully cooked (you may need to add more water along the way). When rice is cooked: add more a pinch more of cinnamon/tumeric (to taste) with kale (2 cups) , small handful of cashews, small handful of raisons and 1/2-1 tbsp. of ghee. Mix all ingredients and let them sit covered under low heat for a few more minutes.
The scents coming from your cooking pot will let you know when the meal is ready:)
